Sourdough Discard Banana Muffins
Ingredients
125 g sourdough discard
2 ripe bananas
1/2 c coconut oil
2 eggs
2 teaspoons vanilla extract
1/3 c brown sugar
1/3 c organic sugar
2 c flour
2 tsp baking powder
1/4 tsp baking soda
1 c chocolate chips
Instructions
Preheat oven to 350
Whisk the discard, bananas, and oil together. Whisk in the eggs one at a time. Add the sugars and vanilla extract and mix until combined.
Fold in the flour, baking powder, and baking soda. Stir in chocolate chips.
Pour into greased muffin tin—I used mini muffins. Bake at 350 for 12 minutes for mini muffins or 20 minutes for full sized, or until a toothpick inserted comes back clean.
