Sourdough Discard Biscuits
Ingredients
1 c. All purpose flour
2 tsp. Baking powder
1/2 tsp. Salt
1 stick (1/2 c) frozen butter
1 c. Sourdough discard
Instructions
Preheat oven to 425.
Combine flour, baking powder and salt. Using a grater or pastry knife, cut butter in chunks into the mix and stir until butter is coated with dry mix. Put back in freezer for 5 minutes to let the butter firm up again.
Remove from freezer and stir in sourdough discard. It should come together as a shaggy dough. Turn out on a floured surface and get dough to form a ball. Roll it out into about 1/4 inch thickness. Fold it 3-4 times over itself and roll out again, this time to about 1/2 inch thickness—the folds will give you the layers. Cut out circles and transfer to a lined baking sheet. Let them rest for 5-10 minutes before cooking. Bake for 20 minutes and brush with butter on top for serving!
