Hulk Muffins (blender)




The green color gives these muffins their excitement and so we call the “Hulk” muffins! They’re also packed with goodies to make you big and strong (like the Hulk!) My kids gobble these up and request them often. We added honey with this recipe, but you could easily replace it with 2 dates and a splash of warm water OR applesauce instead! 


Ingredients

 2 c rolled oats

2 ripe bananas

1/4 c honey 

1 tsp vanilla extract

1 tsp baking soda

2 eggs

1/3 c plain Greek yogurt 

1/4 c milk (replace with any dairy free milk sub) 

1/4 c chia seeds

2 handfuls of fresh spinach

1 c chocolate chips

Instructions

Preheat oven to 350 and spray a mini muffin tin with avocado oil or rub with butter. Combine all ingredients except the chocolate chips in the blender and blend until smooth. Fold in the chocolate chips and pour into mini muffin tin. Bake for 15 minutes. Let cool and enjoy!
