Banana Chocolate Chip Mini Muffins
1/2 c melted butter
1/4 c sugar
1/4 c applesauce
1 egg
1/2 tsp vanilla
1 c flour
1/2 tsp baking soda
2 mashed bananas
1/2 c chocolate chips

Preheat oven to 350* F.
Cream butter and sugar. Whisk in the egg. Add applesauce and vanilla and stir until combined.
Pour in flour and baking soda. Finally, use a fork to mash two bananas. You can leave some bigger chunks of banana if you prefer. Fold in chocolate chips. Pour mixture into mini muffin tins about 3/4 full.
Bake for 12 minutes and enjoy!
After these are fully cooled, I put them 2 by 2 into ziplocks and into the freezer. Then during the week when I need a lunchbox filler, I grab a bag and toss them in! They’re the perfect little kid-day sweet treat during the school day for the kiddos!
